Chicken Pesto Panini Recipe
– 2 boneless, skinless chicken breasts
– 4 slices of ciabatta bread
– 4 tablespoons of pesto sauce
– 4 slices of mozzarella cheese
– 2 tablespoons of olive oil
– Salt and pepper to taste
1. Preheat your grill or stovetop grill pan to medium-high heat.
2. Season the chicken breasts with salt and pepper on both sides.
3. Drizzle the olive oil over the chicken breasts and rub it in to coat them evenly.
4. Place the chicken breasts on the grill and cook for about 6-8 minutes on each side, or until they are fully cooked and reach an internal temperature of 165°F (74°C).
5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
6. While the chicken is resting, preheat a panini press or a large skillet over medium heat.
7. Spread 1 tablespoon of pesto sauce on each slice of ciabatta bread.
