Ingredients:

2 pounds boneless lamb shoulder, cut into chunks
3 tablespoons all-purpose flour
2 tablespoons vegetable oil
1 large onion, diced
3 cloves of garlic, minced
4 carrots, peeled and sliced
3 celery stalks, sliced
1 pound potatoes, peeled and diced
2 sprigs of fresh thyme
2 bay leaves
4 cups beef broth
Salt and pepper, to taste

Instructions:

In a large bowl, season the lamb chunks with salt and pepper. Sprinkle the flour over the lamb and toss to coat evenly.
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Working in batches, brown the lamb on all sides until golden brown. Remove the lamb from the pot and set aside.
In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
Add the carrots, celery, and potatoes to the pot. Stir well to combine with the onion and garlic.
